It’s World Vegetarian Day, so to celebrate I thought I’d share 12 vegan and vegetarian recipes with you.
I still eat meat and fish on occasion but I grew up on Asian food so I’ve always been ‘flexitarian’ to a degree. The past few years I’ve been cooking more and more vegan food cause it’s super tasty, easy and affordable. I’d rather have a good vegan meal than shitty meat.
I think it’s important to get some ingredient intelligence down. Knowing how to treat tofu is a major key in cooking vegan or vegetarian.
Gotta a love a saucy noodle. And they go especially well with tofu, it’s almost like they’re from the same continent. Just be sure to check the ingredients and avoid egg noodles if you want to make it vegan.
Tacos, Wraps and Burritos
A lot of Asian food is already vegetarian and can easily be made vegan, but Mexican food also lends itself well to ‘veganize’.
- Lucky Peach’s Power Vegetables sweet potato veggie burrito
- Vegan tofu larb gai lettuce wraps
- Vegan Korean inspired crispy tofu tacos
- Vegetarian Buffalo cauliflower tacos
Vegetarian and Vegan Recipes to have with Rice
You can’t go wrong with some good ol’ rice. And it’s not just the Asian kitchen that works well with these, Italian food does quite nicely too sans meat.
- Vegan roast vegetable risotto
- Gado gado, classic Indonesian salad
- Vegan cauliflower Tika Masala
- Lucky Peach’s vegan mushroom mapo tofu
The ultimate veggieburger
I’m not big on store-bought veggieburgers, they just taste like the worst of store-bought meatburgers to me. But if you’re in a pinch they work just fine. If you’re looking for something fancier though, I’ve got you covered.
Vegan desserts are something I’m going to have to explore further, and I think we should end World Vegetarian Day on a sweet note. This cake is super easy and you wouldn’t even know it was vegan if no one told you.
