Simple Rice and Beans for Two

You can’t really have jerk chicken without rice and beans, so here’s a nice and simple rice and beans recipe to go with my slow cooker jerk chicken. Serves 3-4 depending on how much you like to eat.

For the rice and beans

  • 2 tsp olive oil
  • ½ cup long grain rice
  • 1 clove garlic, minced
  • 1 tsp cumin
  • ½ tsp chili powder
  • ¼ tsp salt
  • ⅛ tsp cayenne pepper (optional)
  • 1 cup black beans (from a can, drained and rinsed)
  • ½ cup crushed tomatoes
  • ½ cup water
  • cilantro, for serving

To make the rice and beans, heat some olive oil in a small saucepan over a medium high heat. Add the rice, stirring continually until all the grains are lightly coated in oil.

Now add the garlic, cumin, chili, salt and cayenne. Stir for 1-2 minutes until fragrant. Stir in the black beans, crushed tomatoes and water and turn up the heat.

Once everything’s come to a boil, reduce the heat to low and leave to simmer for 20-22 minutes until all the liquids has been absorbed or evaporated and the rice is fully cooked. Sprinkle with cilantro (if using) and serve.
